Fettucine Primavera Recipe

Serves: 4
Time to prep: 15 minutes
Time to cook: 10 minutes

Ingredients
  • 300g fresh fettucine
  • 1 lemon
  • 1/2 cup (80g) fresh or frozen peas
  • 1/2 cup (85g) frozen broad beans, peeled
  • 100g snow peas, thinly sliced lengthways
  • 1 bunch asparagus, woody ends trimmed
  • 4 yellow squash, end trimmed, thinly sliced
  • 2 teaspoons olive oil
  • 2 garlic cloves, crushed
  • 1 tablespoon Dijon mustard
  • 250ml PHILADELPHIA Light Cream For Cooking, a cream alternative
  • 4 green shallots, thinly sliced

Method
  • Use a zester to remove the rind from the lemon. (Alternatively, use a vegetable peeler to peel rind from lemon. Use a small, sharp knife to remove white pith from rind. Cut rind into very thin strips). Juice the lemon.
  • Cook the pasta following packet directions until al dente. Add the peas, broad beans, snow peas, asparagus and squash in the last 2 minutes of cooking or until bright green and tender crisp. Drain well.
  • Meanwhile, heat the oil in a large frying pan over medium heat. Add the garlic and cook, stirring occasionally, for 30 seconds or until aromatic. Add the mustard, lemon juice and PHILLY and bring to a simmer. Cook for 1-2 minutes or until sauce thickens slightly. Add the pasta mixture and half the shallots and half the lemon rind and toss to combine. Remove from heat. Taste and season with salt and pepper.
  • Divide among serving bowls. Top with remaining shallots and lemon rind and serve immediately.

Held on Sunday, July 21, the scenic course over either the 3km, 5km, 10km or 21km events follows the picturesque Redcliffe waterfront, starting and finishing in front of the Belvedere Hotel next to the Woody Point jetty.

Anyone wanting to join the DHP team needs to complete a registration form at reception and pay the entry cost and $25 for a DHP Special Memorabilia Jetty2Jetty shirt. Early Bird savings are in place until end June so get in quick.

Beef Dhal Recipe

This recipe for beef dhal is a great way to incorporate extra fibre into your diet.

Serves: 4
Time to prep: 10 minutes
Time to cook: 40 minutes


Ingredients
  • 1/4 cup yellow split peas
  • 1/4 cup red lentils
  • 2 teaspoons rice bran oil
  • 1 small brown onion, finely chopped
  • 1 small red capsicum, finely chopped
  • 2 tablespoons balti curry paste
  • 4 cups Bolognese sauce (see related recipe)
  • 1 tablespoon lemon juice
  • 1/2 cup chopped fresh coriander leaves
  • Toasted Turkish bread, Greek-style yoghurt and fresh coriander leaves, to serve

Method
  • Cook split peas in a medium saucepan of boiling water for 10 minutes. Add lentils. Boil for a further 15 minutes or until tender. Drain.
  • Heat oil in a large saucepan over medium heat. Add onion and capsicum. Cook, stirring, for 3 minutes or until onion has softened. Add curry paste. Cook, stirring, for 1 minute or until fragrant.
  • Add bolognese, lemon juice and drained peas and lentils. Cook, stirring occasionally, for 8 to 10 minutes or until heated through. Stir in coriander. Serve beef dhal with toasted Turkish bread, yoghurt and coriander.

A Healthier Option - Strawberry Muffins

Makes: 10
Time to prep: 10 minutes
Time to cook: 25 minutes

Ingredients
  • Light olive oil spray
  • 225g (1 1/2 cups) self-raising flour
  • 1/2 cup Splenda sweetener
  • 1 x 250g punnet strawberries, washed, hulled, coarsely chopped
  • 200g (3/4 cup) low-fat natural yoghurt
  • 60ml (1/4 cup) light olive oil
  • 1 egg, lightly whisked

Method
  • Preheat oven to 200°C. Spray ten 80ml (1/3-cup) capacity muffin pans with olive oil spray to lightly grease.
  • Sift the flour into a large bowl. Stir in the sweetener and strawberry. Make a well in the centre.
  • Combine the yoghurt, oil and egg in a large jug. Pour into the centre of the flour mixture. Stir until just combined.
  • Divide the mixture evenly among the prepared pans. Bake for 25 minutes or until a skewer inserted into the centres comes out clean. Turn onto a wire rack to cool.

MATE Seminar - Reminder



Dolphins Health Precinct is excited to introduce Making Aquatics a Terrific Experience (MATE), an innovative and interactive community seminar aimed at optimising health and wellness opportunities for people with medical conditions and/or disabilities.

The MATE seminar, run by AUSTSWIM (Australasian Council for the Teaching of Swimming and Water Safety), provides participants with the information, skills and confidence to take a person with a medical condition and/or disability to the pool for recreation activities.

The MATE seminar is not about swimming strokes; it is a guide to encouraging and facilitating physical activity in an aquatic environment for people who do not always have the opportunity to participate in aquatic activity.

Why is Aquatic Activity beneficial?

Miso broth with sesame salmon & udon noodles

A little miso, Asian greens and fresh salmon combine in a speedy Japanese-style soup.

Serves: 4
Time to cook: 20 minutes

Ingredients
  • 1.5L (6 cups) water
  • 1 tbs salt-reduced chicken stock powder
  • 100g (1/3 cup) white miso paste
  • 2 x 200g pkts shelf-fresh udon noodles
  • 3 shallots, trimmed, cut into 4cm pieces
  • 1 bunch baby choy sum, trimmed, cut into 5cm pieces
  • Olive oil spray
  • 2 (about 210g each) salmon fillets, skin removed
  • 1 tbs sesame seeds
  • Soy sauce, to serve
  • Shallot, extra, thinly sliced, to serve

Method
  • Place water and stock powder in a large saucepan over high heat. Bring to boil. Add miso paste and stir until the miso dissolves. Reduce heat to medium-low and hold at a gentle simmer.
  • Add the noodles and cook for 1-2 minutes or until just soft. Add the shallot and choy sum and cook for 1 minute or until the choy sum just wilts.
  • Meanwhile, heat a non-stick frying pan over medium-high heat. Spray with oil. Cook the salmon for 2-3 minutes each side for medium or until the fish flakes easily when tested with a fork. Sprinkle with the sesame seeds.
  • Flake the salmon into large pieces. Divide the broth and noodles among serving bowls. Drizzle with soy sauce and top with extra shallot.

Through Dolphins Health Precinct philosophy, "Dolphins" with the help of our friend, "Splash" will give your child the ultimate in fun based learning! The Learn to Swim teachers' goal in every lesson is to create an adventure where children will be transported by new and innovative teaching techniques. This will ensure that they will both enjoy their time and learn at a faster rate. The facilities have been specifically designed with children in mind and cater to their every need, making every lesson an enjoyable experience. 

To assist children to learn how well they are progressing on their Learn to Swim journey, Dolphins Health Precinct Learn to Swim program consists of 12 levels. The different levels, each represented by a named Dolphin character, mark a different and significant stage in the learning process. 

The Learn to Swim year consists of four terms to coincide with QLD school terms. Certificates are awarded to Learn to Swim students who partake in Safety Week and/or term certificates. Safety Week is a dedicated week each term that is Governed by Royal Life Saving. Upon successful completion of the Royal Life Saving Swim & Survive program, each participant is awarded a certificate. Term certificates are awarded to Learn to Swim students who progress up a level in the program.

Worth Shouting About


Have you heard? Dolphins Health Precinct is about to launch the latest in group fitness classes. 

“We are so excited that Dolphins will be the first fitness centre to launch these classes,” said Tina Fotu, group fitness manager for DHP. Tina said the new programs were designed to bridge the gap between land and aquatic programs with Dolphins selected as the perfect venue to launch them because of their indoor heated pool and group fitness studios. 

Dolphins Health Precinct members will be the first to sample the new programs that are expected to make a positive impact in the fitness industry. “Working out in water has thankfully evolved,” Tina said. “The ongoing challenge for the fitness industry is to dispel the myths associated with aqua fitness. “Every class we teach is an opportunity to demonstrate that aquatic fitness is a dynamic and challenging form of exercise suitable for all abilities and fitness levels. “RIPPLE EFFX programs are going to be a huge hit with our members and we are very excited about being the first facility to launch them. “We know our members are going to love new programs, the formats are easy to follow and extremely effective. “We have such a mix of young and young at heart members here at Dolphins so having classes that cater for all ages and fitness levels is wonderful.”
