Mindful Eating in 9 Steps!


Struggling to lose weight? Here are 9 things to consider next time you're at the dinner table.

There’s more to savouring a meal than simply avoiding screens and eyeballing your food as it goes from fork or spoon to mouth.

At Austria’s F.X. Mayr Health Centre, where he is medical director, Dr Stephan Domenig encourages a silent dining room and spends a great deal of time teaching people how to re-think their relationship with food.

Mindfulness is a critical part of that process. In his book, The Alkaline Cure (Penguin Books, $24.99), he outlines the following tips for truly mindful eating that will help you better enjoy and digest every mouthful.


9 diet tips for mindful eating:
  1. Allow at least 30 minutes at the table for each meal.
  2. Make sure you are comfortably seated. Take a couple of deep breaths to settle yourself.
  3. Notice any feelings of impatience and urges to just get on and eat the food. Stop thinking of things you need to do. Dedicate this time to enjoying your food.
  4. Look at the food on your plate. Appreciate its visual qualities. Smell your food and breathe in the mouth-watering aromas.
  5. Think about how much food you put on your fork – the less the better.
  6. When you put the food into your mouth, appreciate the different flavours and textures.
  7. Chew well, around 30 times is the minimum. Ensure the food in your mouth it fully masticated before you swallow.
  8. Put your fork down between bites.
  9. Resist any urge to rush to dessert, the next bite of food, or to get up and do something else.

High Fibre Beef Dhal


This recipe for beef dhal is a great way to incorporate extra fibre into your diet.

Serves: 4
Time to prep: 10 minutes
Time to cook: 40 minutes

Ingredients
  • 1/4 cup yellow split peas
  • 1/4 cup red lentils
  • 2 teaspoons rice bran oil
  • 1 small brown onion, finely chopped
  • 1 small red capsicum, finely chopped
  • 2 tablespoons balti curry paste
  • 4 cups Bolognese sauce (see related recipe)
  • 1 tablespoon lemon juice
  • 1/2 cup chopped fresh coriander leaves
  • Toasted Turkish bread, Greek-style yoghurt and fresh coriander leaves, to serve
Method
  • Cook split peas in a medium saucepan of boiling water for 10 minutes. Add lentils. Boil for a further 15 minutes or until tender. Drain.
  • Heat oil in a large saucepan over medium heat. Add onion and capsicum. Cook, stirring, for 3 minutes or until onion has softened. Add curry paste. Cook, stirring, for 1 minute or until fragrant.
  • Add bolognese, lemon juice and drained peas and lentils. Cook, stirring occasionally, for 8 to 10 minutes or until heated through. Stir in coriander. Serve beef dhal with toasted Turkish bread, yoghurt and coriander.

Wonderful Outcome for Moreton Bay Boccia Club


We received the below email, photo and certificate from the Moreton Bay Boccia Club in relation to fundraising through Dolphins Health Precinct. We were really pleased with the outcome as well as learning that they have direct entry into next years National and Asian Championships - well done guys!

On behalf of the Moreton Bay Boccia Club, we would like to thank you for helping our selected Queensland representatives get to the recent National championships held in Sydney. Due to your generous donations we were able to successfully fundraise over $800, allowing our athletes to cover the extra costs associated with travelling with a disability and transportation of equipment.

Our Selected Athletes, Nathan Langdown and Kirsten Lindemann represented Queensland and the Moreton bay region proudly finishing in the pairs event in 5th place. This guarantees them direct entry into next years National and Asian Championships, where they are hopeful of going even better. The experience they have now gained by competing at this level will prove invaluable for these future competitions and their ultimate goal of making the 2020 Australian Paralympic Boccia Team. These are big goals from two individuals who have faced some major challenges in their past and have thrived from the encouragement and support they have received from our community. Their confidence has raised to life changing levels and we have witnessed the flow on effect to the rest of the team.

Balsamic Pork with Rocket & Butter Bean Salad


Canned beans and crumbled ricotta add soft, creamy textures to this super-healthy winner. Infuse lean pork with a fresh orange and ginger marinade, then pair it with a peppery salad.

Serves: 4
Time to prep: 10 minutes
Time to cook: 10 minutes

Ingredients
  • 2 teaspoons finely grated fresh ginger
  • 80ml (1/3 cup) fresh orange juice
  • 2 1/2 tablespoons balsamic vinegar
  • 4 (about 125g each) pork medallions
  • Olive oil spray
  • 1 bunch rocket, ends trimmed
  • 6 small radishes, ends trimmed, thinly sliced
  • 1 x 400g can butter beans, rinsed, drained
  • 2 teaspoons olive oil
  • 100g low-fat ricotta, crumbled

Method
  • Combine the ginger, 60ml (1/4 cup) orange juice and 1 1/2 tablespoons of vinegar in a shallow glass or ceramic dish. Add the pork and turn to coat. Cover with plastic wrap and place in the fridge for 30 minutes to marinate.
  • Heat a large non-stick frying pan or chargrill over high heat. Spray with olive oil spray. Add the pork and cook for 3 minutes each side for medium or until cooked to your liking. Transfer to a plate. Cover with foil. Set aside for 5 minutes to rest. Thickly slice across the grain.
  • Meanwhile, combine the rocket, radish and beans in a large bowl. Place the oil, remaining orange juice and vinegar in a small jug and whisk until well combined.
  • Divide the rocket mixture and pork among serving plates. Sprinkle with the ricotta. Drizzle over the dressing to serve.

Healthy Snack: Strawberry Balls Recipe


These super-easy raw balls are healthy, bite-sized and perfect for busting hunger - keep these on hand for kids or guests.

Makes: 19
Time to prep: 20 minutes

Ingredients
  • 200g ripe strawberries, hulled
  • 1 cup desiccated coconut
  • 3/4 cup traditional oats
  • 2 tablespoons white chia seeds
  • 2 tablespoons coconut oil
  • 2 teaspoons acai powder (optional)
  • 2 1/2 tablespoons desiccated coconut, extra, to coat
Method
  • Process strawberries until smooth. Add remaining ingredients and process until finely chopped and mixture comes together.
  • Roll 1 level tablespoon into balls.
  • Place extra coconut in a shallow plate. Roll balls in coconut to coat.

Turkey & Cranberry Patties Recipe


With a sweet and savoury twist, these patties will be popular with kids and adults alike.

Makes: 8
Time to prep: 10 minutes
Time to cook: 5 minutes

Ingredients
  • 500g turkey mince
  • 1 small red onion, chopped
  • 1/2 cup dried breadcrumbs
  • 2 tablespoons cranberry sauce
  • 1 tablespoon parsley, chopped
  • 1 egg
  • 1 clove garlic, crushed
  • 2 tablespoons olive oil
  • Plain flour
  • Potatoes, char-grilled, to serve
  • Green beans, steamed, to serve

Method
  • In a bowl, mix mince, onion, breadcrumbs, cranberry sauce, parsley, egg, garlic and season to taste. Form into eight even-sized patties. Chill for 15 mins.
  • Heat oil in a frying pan on medium. Dust patties in a little plain flour, shaking off excess. Fry for 4-5 mins each side until cooked through. Drain on paper towels. Serve with char-grilled potatoes and steamed green beans.
